The Joy of a 5-Minute Pickle Sandwich
This is what I make when I don't have time to make lunch.
A super-sandwich that just happens to be vegetarian. Instead of cold cuts, which are known to go bad when you aren't paying attention, we're turning to briny pickles as the chief ingredient officer (CIO). Crunchy and cheery, they last an eternity in the fridge and, in this recipe, they come in handy not one, not two, but three different ways.
