Happy Easter! ๐Ÿ‡๐Ÿ’๐Ÿฅš I hope that you have a wonderful holiday - filled with joy and appreciation for our blessings.๐Ÿ’•

 

Easter and spring always makes me think of picnics, spring flowers and egg hunts. Growing up in Korea, school picnics was what every kid looked forward to. There was one in the spring and one in the fall. I think I especially looked forward to Sopung ์†Œํ’ (picnic) because of the lunch box filled with Kimbap. Kimbap for some reason was not made very often but for picnics, it was a must. So, I've decided to share some of my favorite lunchbox ideas with you below! These dishes pack well, are easy to eat, delicious, and great for regular every day lunchboxes!

 

It's also not Easter without some yummy egg recipes, is it?? I've included some of my top Korean egg dishes that are perfect as side dishes, a simple meal or snack. Spring is also a great time for fresh kimchi now that the winter Kimjang kimchi are beginning to get really sour. So I will share some easy kimchi recipes below!

Kimbap is the best food for Sopung!! It's simple to pack and you can choose from a variety of filling combinations!

 

Mayak Kimbap ("Drug" Kimbap) is a much more simple but addictive version of kimbap that uses just ONE filling ingredient - carrot or cucumber! Make sure to enjoy it with my spicy soy mustard dipping sauce!

10 Korean Kimchi recipes! Here are some of my favorite simple Kimchis to make - Bomdong Geotjeori, Green Cabbage Kimchi - and not in this list but I highly recommend Nabak Kimchi (with minari)!

Hwajeon is a fresh flower sweet rice pancake that is traditionally made using flower blossoms that are in season. This dessert goes all the way back to the Koryo Dynasty and is best enjoyed with tea and some honey for dipping!

Bukkumi is one of my favorite desserts! These sweet rice dumplings are filled with sweet red bean paste and pan-fried in sesame oil to create a crispy outside but chewy inside.
