When it comes to feeding my kids, there are some hills that (as the expression goes) I've decided not to die on. Whole wheat bread is one of them. We dietitians like to sing the praises of whole grains like whole wheat bread and whole grain pasta. That's because they've generally got more fiber, protein, and vitamins than refined ones do. But my boys have never liked whole wheat bread. No matter how many brands I've tried, they've just always preferred white bread. So at some point I let go and started stocking both whole wheat and white bread. I get it: Whole wheat versions of foods can be denser and have a stronger flavor. But with baking, there's a magical ingredient that I swear by: whole wheat pastry flour. It produces mild, tender baked goods like cookies and muffins (FYI it's not recommended for bread because of its lower protein content). Sure, using whole wheat pastry flour doesn't magically transform cookies into whole wheat bread. But it's a nice way to get some extra whole grains when you bake for your family.
