Is the Cauliflower Purple of Gold? ...

... Friends, it's both πŸŽ‰

I spent yesterday afternoon sitting on a metal bleacher watching a high school soccer game surrounded by parents wearing heated vests, pulled-up hoodies, and hats. It was sunny but breezy, quintessential fall weather, and by the time the game ended, I was chilled to the bone.

I returned home, cranked up the oven, chopped up some cauliflower, and pulled out two spices I rely on a lot this time of year: silk chili and garlic powder. I love these spices for roasting vegetables of all kinds from sweet potatoes to delicata squash to, most especially, cauliflower.

Here's my basic cauliflower-roasting method:

  • Oven @ 425ΒΊF convection roast.
  • Season cauliflower (two chopped heads) with 1.5 - 2 teaspoons kosher salt (Diamond Crystal) and 1/4 cup extra-virgin olive oil. If you have the spices, use 1 teaspoon garlic powder and 2 to 3 teaspoons silk chili. Toss.
  • Roast for 25-30 minutes:
