There's a reason why sausage and veggie/bean skillet recipes are on so many food blogs--they're super simple, hearty, quick, and delicious! This is my version with vegan sausages, a thick and creamy white bean base, lots of kale, balsamic vinegar for brightness, chillies, and sun dried tomatoes.
