Hello reader Christmas has come early. My washing machine did indeed arrive last Friday and what an all singing all dancing machine it is. The fact I'll probably only use two programmes and won't connect it up to the internet to make it smart makes it seem like overkill. But it's hard, if not impossible, to get simple machines any more. Despite my early Christmas present, I've only just realised how close Christmas is and how much I have yet to do. I'm sure I'm not alone there. But it comes around so fast each year, it usually catches me unawares. Or unprepared at least. If you're anything like me, this week's recipe is a good one. I often bake crackers at Christmas. They're quick and easy to make, yet everyone thinks you're a genius. They make welcome gifts when given with a wedge or two of special cheese and a homemade jar of chutney. They're also rather good for snacking on. These seaweed spelt crackers are incredibly versatile. You can use ordinary wholemeal flour and whatever flavourings you like. I've given a whole heap of ideas for alternatives in the post. The crackers are vegan and stay crisp for at least a week if kept in an airtight container. Christmas cookies have really taken off in recent years. Again, I like to bake a few for gifts. If you're thinking of doing the same, but haven't quite got your head around it yet, here are four of my favourites. Christmas Butter Biscuits These multi flavoured and coloured biscuits are so impressive, but really quite simple to make. You can have two, three or even four interchangeable flavours. Take a look at the image below the one for this week's post. Vegan Amaretti Amaretti are so delicious with their slightly crunchy outside and chewy almond insides. These vegan ones are just as good as the original made with egg whites. Roasted Hazelnut Chocolate Crinkle Cookies The aroma of these crinkle cookies as they bake percolates through the house in the most delightful way. They're worth baking for this alone. But they taste amazing too. They also keep well, so perfect for getting ahead of the game. Shortbread You can't have Christmas without shortbread. It's probably my all time favourite biscuit. It''ll be no suprise then that I have heaps of shortbread recipes on Tin and Thyme. Take your pick.
