Despite loving vegetables (I am a vegetarian, after all), there are days when I just can't handle the idea of eating a salad or needing to chop a bunch of things to make a curry. On those days, this gorgeously green Spinach Soup (a.k.a. Palak Soup) is my answer.
Made with just 15 minutes of prep and another 15 minutes of cook time, this simple recipe couldn't be easier. There's almost no chopping to be done — the blender takes care of everything!
Even better, this tasty, creamy soup is totally dairy-free, and, since it's blended, can easily be sipped from a mug when you're on the move or when you just want to cuddle up under a pile of blankets. It's the definition of comfort!
