My Meal Plan + Weekly Recap (April 11th)

Hey there reader,

I hope the beginning weeks of Spring have been good for you. It's been a couple of hot days here in Buffalo, NY.

Summer is right around the corner! However, I try not to get too excited because it is April in Buffalo which means it can still snow. Not joking; it's snowed plenty of times in April!

Anyway, the warmer weather is a great reminder to stay on track with eating and exercise.

Speaking of which…

Last week, I did great! We celebrated Easter on Sunday, so I did go a little overboard with perogies and ham, but I didn't go off the rails.

The rest of the week, I drank smoothies, ate mason jar salads, and kept dinners portioned-controlled. I'm not saying I was 100% perfect, but I felt good going into the weekend.

On Monday morning, I got right back into my exercise routine. I follow the exercise routines in my 30-day Workbook.

Let's get to this week's meal plan and exercise schedule.

I plan to exercise 5 times this week. Like every week, I will get in an extra walk with my husband after work if I can.

Here's my meal plan for the week.

Chicken Cacciatore - I made this to take to a friend's house this weekend and saved some to eat during the week.

Baked Buffalo Chicken Tenders (this is a recipe I'm testing, so we are eating it again.)

Baked Codd with Rice (I made this couple of weeks ago and LOVED it. I'm going to share it on the blog soon)

Leftovers
