I'm currently obsessed with all things breakfast right now, so I figured I'd keep sharing my new recipes!
This week I'm bringing you an all-American Mixed Berry Muffin.
These muffins are crazy easy to make and they're at their best when you use frozen berries! And don't we all have a bag of those sitting in our freezer?
Oh by the way... when I say these muffins are easy, I mean E-A-S-Y.
There's no mixer involved, no butter to get softened (we melt it instead), and as mentioned before, you just grab a convenient bag of frozen berries and dump them right in the batter!
The muffins are light, moist, and super fluffy. The tops are big with glorious crisp edges. And we add a touch of lemon zest to brighten up the soft and fluffy muffin batter.
It's the perfect muffin and I'm so happy to give you the recipe.
