Now that July's here in full force, you're probably seeing blueberries pop up at your local market.
And I wanted to share something with you - it's my family's favorite blueberry recipe. Something I make over and over again in the summer months because 1) it's super delicious, and 2) it's easy.
We're talking minimal effort and BIG results.
It's a clafoutis which is a French custard-cake. This one is brimming with blueberries and scented ever-so slightly with vanilla. And, best of all, you'll only spend a few minutes of active time in the kitchen (the rest of the magic happens in the oven).
Here's what you need to know:
- Blueberries are rich in polyphenols. These are plant compounds that feed beneficial bacteria in the gut and also support cellular health.
- Plenty of eggs give the clafoutis it's tender texture, and a good dose of nutrients such as choline (which supports memory as we age), vitamin A, and healthy fats.
- We use einkorn flour for a little bulk. It's an ancient variety of wheat that's rich in micronutrients, but you can also substitute all-purpose flour or your favorite gluten-free flour, if you prefer.
